Traybake packed with vegetables with feta cheese

This traybake is easy and quick to make and is also packed with vegetables. All the different coloured tomatoes and bell peppers make it a colourful party!

Note: Use vegetable feta to keep the recipe lactose-free and vegan.
Getting Started

Preheat the oven to 200 degrees.

Chop the onion and cut the tomatoes into half wedges. Cut the bell peppers and courgette into small cubes.

Put the tomatoes, bell pepper, courgette and onion in a baking dish. Place the feta in the center of the dish.

Drizzle the feta with the olive oil, chili flakes and salt and pepper.

Place the baking dish in the oven for 20-25 minutes. The feta should turn a little golden brown.

Meanwhile, cook the orzo according to the instructions on the package.

Remove the baking dish from the oven. Add the orzo and mix well.
