Salad in a jar
A colourful, delicious salad in a glass jar. Since we start with the dressing, they stay good in the fridge for a nice long time. Perfect for meal prep!

Cook the quinoa as directed on the package.
Cut the sweet cherry tomatoes in half and cut the bell pepper and cucumber into small cubes. Prepare four (glass) jars with lids.
Put into each jar 1 tablespoon of olive oil and 1 teaspoon of balsamic vinegar for the dressing. Add salt and pepper to taste.
Then add the salad in layers. Divide the cherry tomatoes between the jars. Then do the same with the cucumber, bell pepper, quinoa and feta cubes. Top the salad with a handful of mixed lettuce until the jar is completely full.
The salad will last in the fridge for a few days. To serve, flip the jar over onto a plate. You'll have a delicious salad right away!
