Vegetarian stuffed bell pepper
A stuffed bell pepper is easy to make and looks great too! You prepare them in 20 minutes, then let the oven do its work and you have a colourful party on the table!

Preheat the oven to 180 degrees and put baking paper on the baking tray. Do not put the baking tray in the oven yet.
Heat a large pan or frying pan over medium-high heat. Heat a little olive oil in it.
Crush the garlic and chop the onion. Then fry them in the pan until the onion is glazy. Then add the oregano and paprika powder.
Mix the garlic powder with the pasta sauce. Then add the pasta sauce, vegetable broth and rice to the pan. Stir well, bring to the boil and then turn the heat down to low. You will cook the rice until tender in the pasta sauce, according to the time on the package.
Remove the pan from the heat, add the peas and corn (drained) and stir through. Season to taste with salt and pepper.
Halve the bell peppers and cut out the hearts. You can leave the stems on for decoration if you like, these are not edible.
Place the half bell peppers on the baking tray and brush them with a little olive oil. Then fill them with the rice mixture and spread the grated cheese on top.
Place the stuffed bell peppers in the oven for 10 minutes until the cheese is melted and turned light brown.
