Pumpkin soup with pointed peppers and sweet potato

This pumpkin soup makes it quick and easy to put a healthy meal on the table. And this soup is packed with vegetables and vitamins.

Chop the onion and thinly slice the garlic clove.

Peel and halve the pumpkin. Remove the seeds and cut the pumpkin into approx. 1 x 1 cm cubes.

Peel the sweet potato and cut it into cubes along with the red pointed pepper as well.

Halve the pepper, remove the seeds and chop finely.

Heat the olive oil in a large pan and fry the onion, sweet potato, red pepper and red pointed pepper in it for about 4 minutes. Don't like spicy? Then omit the pepper.

Add the stock and bring to the boil. Let the soup simmer for 25 minutes.

Meanwhile, finely chop the sage. Add this just before serving.

Puree the soup with a hand blender until creamy. Season to taste with pepper.
