Tomato soup

Nothing beats a bowl of fresh tomato soup. This delicious soup is quick to prepare, so you'll have a healthy meal on the table in no time!

Peel and finely chop the onion and garlic.

Remove the crowns from the tomatoes.

Cut the potatoes, leeks and winter carrots into small pieces.

Using a piece of string, make a spice pouch of bay leaf and thyme.

Fry the onion and garlic in the olive oil over low heat. Add a dash of the stock and the tomatoes. Let steam for 5 - 10 minutes on low heat with the lid on the pan.

When the skin starts to come off the tomatoes, deglaze with the remaining stock.

Add the remaining vegetables, the spice packet and the paprika powder to the stock. Bring to the boil again. Simmer on low heat for 15 minutes.

Remove the spice tube and smooth the soup with a hand blender.

Reheat the soup briefly and stir in some finely chopped parsley. Season to taste with pepper.
