Paprika pancakes
Who would have thought that one of children's favorite dishes, pancakes, could be so healthy and delicious? Fill to your heart's content with your favorite vegetables.

Halve the bell peppers and remove the seeds. Place in a baking dish and drizzle a little olive oil over the bell peppers. Roast them in a preheated oven (200 degrees) for half an hour, until they are wrinkly. Then let them cool in the dish. You don't need to remove the skins, you'll mix them all in later.
Mix the flour with the eggs, milk, pepper and salt to make a batter. Now use a hand blender to mix in the roasted bell peppers until you have an even batter.
Heat a frying pan with some oil and fry the pancakes in it, one by one. They don't need to turn golden brown, but do need to be cooked. Set them aside and leave to cool.
Time to serve. Choose a topping of your choice. Fill with your favorite vegetables or bake a slice of cheese or bacon while baking.
