Stuffed tomatoes with goat cheese and a parmesan crumble
Have you ever stuffed tomatoes with a mix of goat cheese, sultanas and pine nuts? Combine the stuffed tomato with a crispy topping and you have a delicious snack.

Cut the tops off the tomatoes and then hollow them out with a spoon.
Preheat the oven to 200 degrees and place the tomatoes in a baking dish.
Finely chop the green herbs.
In a bowl, mix the goat cheese with the pine nuts, sultanas and green herbs into a paste. Season with salt and pepper and fill the tomatoes with this mixture.
In another bowl, mix the panko with the finely grated parmesan cheese. Crush the clove of garlic and mix this into the panko and cheese as well. Do this with your hands to make a kind of "wet sand". Then spread this mixture over the tomato filling and put the top parts of the tomatoes on top.
Put the tomatoes in the oven for 10 minutes until they are al dente but the filling is still lukewarm.
Serve them immediately and enjoy!
